In his 20-year career, he has edited and written for dozens of national trade and consumer publications. When not working, he's in the kitchen feeding his family and entertaining guests. "I grew up and still live in one of America's top beef- and pork-producing states, so seafood was rarely cooked at home — and if it was, it was frozen fish sticks for Friday dinners during Lent," says Coomes. "And while the proliferation of seafood restaurants and retail seafood shops here show that's changing, I was still shocked to learn during my research for this piece that seafood sales represent less than 2 percent of grocery store revenues. Indeed, seafood consumption has a long way to go in catching up to consumption of land proteins, but I'm confident many consumers would be willing to make the switch if shown how." Q Contributing Editor Lauren Kramer is a freelance journalist who lives in British Columbia with her husband and four children. She loves to read, write and travel. She writes about the business of food, travel and weddings, and about literature, religion and family life. ON THE COVER Despite its versatility and ease of preparation, many U.S. consumers still shy away from seafood. Per-capita consumption is down and experts weigh in about why.
